Salted Egg Yolk Chicken Recipe

350g boneless chicken leg meat, cut into bite-sized pieces
1 egg
1 cup tapioca flour
1 teaspoon salt & pepper
2 tablespoon butter
Olive oil
Handful of curry leaves
3 salted egg yolks
Marinate chicken with egg, salt and pepper.
Dredge chicken pieces in tapioca flour, make sure the chicken is covered with tapioca flour and transfer it onto a plate.
Deep fry chicken till golden brown. Drain and transfer onto paper towels to remove excess oil.
Separate the salted egg yolk and put into a bowl. Steam it for 4-5 min.
Smash the steamed salted egg yolk.
Dice chili and garlic
Heat oil in another frying pan, fry the chili, garlic, curry leaves and butter till crisp and fragrant.
Add the salted egg yolks and cook till the mixture becomes bubbly.
Put the fried chicken to the pan and toss till evenly coated.
